Ingredients
- 4 (6-ounce) cod fillets
- 2 tablespoons olive oil, divided
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 cup Globetrotter Granola Disco Dukkah Granola
- ¼ cup panko breadcrumbs
- ¼ cup walnuts, chopped
- 2 tablespoons butter, melted
- Lemon wedges, for serving
Directions
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Pat fillets dry and brush with 1 tablespoon olive oil. Sprinkle with salt and pepper.
In a small bowl, combine Disco Dukkah Granola, panko, chopped walnuts, melted butter, and remaining tablespoon olive oil. Spoon granola mixture over tops of each fillet and gently press to form a coating.
Transfer to oven and roast for 10 to 12 minutes, until fish flakes easily and topping is toasted and golden. Serve immediately.
